The Valdrinal Winery Project was born in the year 2000. It was led by David Cuéllar who wanted to materialize his dream and passion: the creation of Valdrinal.From the beginning, the principal objective has been to produce a high quality wine in small quantities. With the enological help of Ignacio de Miguel, at first, and later of Isaac Fernández, production has been in place since the 2000 harvest season. The resulting wines are already well considered and prestigious. The Valdirnal winery controls 25 hectares of vineyards in different areas around the town of Aranda de Duero in the province of Burgos (Spain). In this area, which is at the heart of the Appellation of Origin, is where we can find the best quality vineyards of the Ribera del Duero, as the wine is known. This is the best area to grow and develop the Tinta Fina grape, also known as Tempranillo.
On the undulated plain, from the rocky terraces of the valley to the steep slopes and the hills in the area we find a mild continental climate tempered by the Atlantic influence, which is ideally suited for cultivation.

The average temperature in the upper Duero area, where our vineyards are found, is 11ºC. This peculiarity allows for a reliable and precise way for the grapes to mature.

The average age of our vineyards planted on the traditional cup-shape method is 30 years and of those planted in trellis 22 years.

Production

Grapes are harvested manually and placed in plastic containers holding 15 kg of grapes each. This allows the grapes to arrive whole and perfect at the winery. They are analyzed to calibrate important parameters such as probable alcohol content, acidity, PH and sanitary conditions of the fruit. Once the grapes arrive, they are placed on the selection table, where they are checked and those that do not comply with the optimum sanitary conditions or maturity required by our technicians for the production of high quality wines, are rejected. The grapes are then put into stainless steel deposits where they are left to macerate for 24 to 36 hours at a temperature no higher than 10ºC. This is followed by fermentation during 4 to 6 days at a temperature no higher than 28ºC. After this, part of the wine is separated from the rest and placed in casks made of French Oak to continue with the malolactic fermentation. The rest of the wine is allowed to continue this fermentation in the stainless steel deposits.

Control

Our winery produces and markets complying with all the norms that the exclusive dedication to our wines requires. The installations also have the ideal characteristics required for the production, aging and bottling. Within what is considered the rustic nature of the winery and its surroundings, we use the best of technologies to ensure that the wine making process clean, easy, safe and highly controlled. From the start of construction of the installations, we have kept close track of all the necessary details to make sure we had the means to work in the best way possible. We have not skimped when choosing the best equipment, thus ensuring that our only concern with production is exactly that: the production.

Ageing

Oak barrels

The Valdrinal winery produces an average 150,000 bottles of different types per harvest season. One of the areas to highlight is the number of oak barrel used. We have an average of 650 casks of which 90% are French oak and the rest American oak. Each of these casks is carefully chosen from more than 10 different cask makers. These casks have a maximum life of three years. Once this period has passed, they are retired and replaced with new ones, thus replacing 30% of the casks every year. With this wide variety of casks and the constant renovation and replacement, we obtain high complexity in our wines.

Bottling

After aging in the casks, the wine is bottled and placed in racks to settle and rest. Here they remain until they are ready to be sent to market in the phase of aging in the bottles. The aging process is carefully controlled all year long as far as temperature and humidity is concerned, both for the cask and bottling aging process.

Rueda

Original Character

The Valdrinal winery highly values its Rueda Verdejo Santamaría wine. Its character is defined through three elements: the area’s native grape, Verdejo, the continental climate and the soil. All of this provides the specific character of the Rueda wines. The delicate production process allows us to obtain such a high quality wine. The harvest takes place at just the right time in the maturation of the grape. The mechanized process, which takes place at night, prevents the unfermented grape juice form oxidizing as the grapes enter the winery with a low temperature (10-15ºC). The grape ferments in stainless steel deposits. After months of maceration we obtain the typical yellowish-green tones characteristic of Rueda. After bottling, we obtain a fresh and fruity aroma and palate.

This wine is produced from the Tinta Fina grape and aged in French Oak casks during 6 months. It has an attractive red cherry color with a brownish-red border. Fragrant and complex scent with hints of spices and black, ripe fruits. Its taste is round, well balanced, noble tannin, smooth and very fruity.

This wine is the personal creation of David Cuellar. The name comes from the English word “quare” which means “squared.” It is Valdrinal squared.

 

The wine is very potent from its very first scent. Intense, structured and fine, all at the same time. An elegant wood as a result of the malolactic fermentation in French casks. It is soft to the taste, seductive, delicate but very persistent. It reminds us of intense red fruits, nuts and balsamic fruits.
